Is the left hand numbering off? Also, the left 1 finger seems to take over the right 1 finger. Any help or understanding would be great.

A lot of the songs in the "Easiest" and "Easier" folders have their finger hints set so that you don't have to move your hand at all: a single finger remains on the same key for the entire song.
In the case of We Wish You A Merry Christmas, it looks like Gilbert labeled things with a little overlap.
